2021 52 Recipe Challenge

Recipe #50: Creamy Tuscan Scallops

The 52 recipe challenge is way of bringing together our friends far and wide who love to cook and share their successes and failures in the kitchen. The challenge; to make 52 new recipes in a single year. This is our ninth year of sharing food, recipes, kitchen catastrophes, and culinary creativity with friends far and wide. Our Facebook group, which started with 9 people, is now over 225 foodies. It is an invite group, so everyone is connected to someone in the group, but after 9 years, there are a bunch of participants who I don't know at all- a community of people connected by a desire to cook great meals at home. The group grew over two dozen members in March 2020 as many people were forced to cook more and learn ingredient substitutions due to COVID-19 Stay at Home Orders. 
 

2020 Top 5

1. Creamy Tuscan Scallops (50): A very rich special occasion dish that won't disappoint. We added the leftovers to risotto and it was another night of magic.

2. Shrimp Scampi (36): The additional herbs in this dish really sets it apart from a traditional scampi recipe. We added zucchini for more veg and it was all delicous. 

3. Smoked Potatoes (19): An absolutely beautiful side dish.

4. Carnitas (23): We made this for a Cinco de Mayo party and it stole the show. 

5. French Onion Soup (1): This measured up to the best French Onion Soups of France. Rich, complex, gorgeous.


Honorable Mention
  • Margarita Mix (25): This margarita is simple and delicious. Recipe says virgin, we un-virgined it with really nice tequilla. We have another favorite margarita mix which is amazing, but a labor of love. This surpasses that recipe for ease.
  • Calamari with Cherry Tomatoes (49): My only regret is I didn't grill bread to sop in the sauce.
  • Balsamic Collard Greens (16): This can be made with any hearty green. Great go-to side dish.
  • Roasted Fingerling Potatoes (42): Another great and simple side dish. 
  • Grilled White Sea Bass (31): Our first time working with White Sea Bass, a delicious sustainable fish we will cook more of.
